During the visit, Mr. Ashok Verma, Manager Mother Dairy Plant discussed about milk processing, controlled by the process automation in which state-of-art microprocessor technology is used to integrate and completely automate all functions of the processing areas to ensure high product quality, reliability and safety. Mr. Verma also discussed about four ways for the processing of the milk which includes clarification, in which the clarifier spins the milk at very high speed, removing all dust particles that are invisible to the naked eye. Second way is standardization in which milk from different breeds of cows and buffaloes varies in its composition. Hence, to make milk uniform in composition, it is standardized by raise or lowering its fat and SNF percentage to a desired level, The third way is homogenization, in which the milk is subjected to a very high pressure due to which the large fat globules present in milk are broken down into tiny droplets. And the last is pasteurization in which the milk is heated at 72oC for few seconds and then is rapidly cooled down to 4oC.
